Special Dish of Royal Thai Restaurant: Thai Rode Curry with Chicken

Thai Rode Curry with Chicken is a very special dish of Royal Thai Restaurant and easy to make. It also brings the flavours of Thailand to your dining room! If you want it less spicy, add less curry or chilli peppers to the sauce. In addition, Thai cuisine is very diverse and uses many ingredients, herbs, and spices.

This curry paste gets its colour and flavour from dried red chillies. Rode curry paste is slightly milder and rounder in taste as compared to green curry paste.

Ingredients you need to make Thai Rode Curry

  • Red Curry Paste 1 tbsp
  • coconut milk 500 ml
  • chicken broth 3 dl
  • lemon leaves 2
  • ginger 1 inch
  • red chilli 1
  • black pepper 1
  • Extra Fine Green Beans 150 g
  • Chicken breasts 600 grams
  • Rice 250 grams
  • lime leaf 1
  • Salt
  • lime1
  • fish sauce 2 tbsp
  • brown sugar 1 coffee spoon
  • Fresh Coriander Baseli
  • fresh mint

How is Thai Rode Curry made in the Royal Thai Restaurant?

Firstly, try a serving of fresh curry paste for this dish. This is also a classic from Thai cuisine. Currently, this product is available in many supermarkets and most Eastern food stores and supermarkets.

Heat a wok on a low flame and heat coconut milk in it. Add red curry paste. Then, mix everything with a whisk.

Pour in chicken stock along with lime leaves.

Peel the ginger root and grate it in coconut milk.

Cut red capsicum into two or four pieces. Remove the seeds and peel the vegetable with your vegetable peeler. (The skin is difficult to digest.) Cut the peppercorns into thick slices.

Cut red chilli lengthwise and remove the seeds. (Those who like less spicy dishes can skip this pepper.) Chop the spicy spices into fine pieces.

Pinch or cut off the top and stalk the green beans. Then cut the vegetables in half.

Add capsicum pieces, chilli, and bean pieces to the pot. Let the vegetables cook in the spiced coconut milk.

Add chicken breast. Cut the meat into dice. Put the pieces of poultry in the pot. After that, let the Thai Rode curry simmer for about 50 minutes in total. Then it has time to absorb the flavours well. 

Meanwhile, cook the rice with a pinch of salt. When you get lemon leaves, then let such leaves cook along with the rice, which smells good.

Then, take a bowl and add fresh lemon juice and brown sugar to the fish sauce. After that, pour the mixture into the pot with the Chicken and red curry.

You can also use lime leaves or dried curry leaves for a curry. Furthermore, you can still buy fresh ones at different tacos. But it’s often easier to find dried ones. Both are delicious.


You can serve each guest a portion of rice with a generous scoop of curry with Chicken. Also, break some fresh coriander leaves and some mint leaves and sprinkle on each plate just before serving. In addition, serve Thai Rode Curry with some fresh broccoli or beans.
